It's a reasonable question—and one we enjoy sharing the answer to, because the secret lies in the genius of traditional Indian kitchens and food preservation's natural science.
Let’s take a look at how our preservative-free pickles remain fresh, flavorful, and safe to eat for months—without artificial additives.
🌞 The Ancient Secret: Sunlight
Classic Indian pickling always starts with nature's greatest preservative—sunlight.
Why it works: Sunlight naturally dries out moisture from the ingredients, decreasing opportunities for bacterial development.
Our process: We sun-dry most of our major ingredients—such as mango, lemon, and amla—before we even pickle them. That slow drying not only enhances shelf life but deepens natural flavor.
